Tomato Cheddar Sandwiches
 
These can be served as an appetizer or as a main course. We like to have these as a light lunch. Even as a lunch, you'll still want to make lots of these! We make these when our tomatoes are ripe in the garden.
 
 
Tomatoes
Cheddar Cheese
Mayonnaise
Saltines
Salt
 
Slice cheddar cheese into thin slices. (If you're using a 5lbs block, each slice will make 4 squares. If you're using an 8 ounce block, each slice will make 2 squares.)
 
Spread saltines with mayo.
 
Top saltines with cheese and tomatoes. Sprinkle salt over the top and serve.
 
Notes:
To make this for less, I buy the cheese, mayo, saltines, and salt from Sam's Club. The cheese is usually $2 a pound or less. I buy mayo in one-gallon containers. Salt is 4lbs for .97.
 
The tomatoes come from our garden.
