Chicken Devan 600

 

1 package (10 -14 oz.) frozen broccoli chopped, steamed (or 2 1/2 cups steamed fresh broccoli)
1 1/2 cups cooked turkey or chicken
2 cans cream of chicken soup
½ cup mayonnaise
1 1/2 cups milk (powdered is fine)
1 tsp lemon juice
2 tsp curry
1 ½ cups dried rice, cooked to equal 3 cups rice
1 cup grated cheddar cheese
 

In a medium bowl, combine soup, mayonnaise, lemon juice and curry powder.

Spread cooked rice in the bottom of a 9 x 13 pan.

Top with chicken.

Cover with cooked broccoli.

Pour soup mixture over the entire top.

Bake at 350º for 20 to 30 minutes, until cheese is melted.

I buy my rice in bulk bags of 50lbs from Sam’s Club (less than $17).

I buy canned chicken there as well and use it when I cannot go to the store. A cheaper way is to use chicken (bought on sale), or, even cheaper, to use turkey. Before Thanksgiving, turkeys are really inexpensive, and I buy several. I cook some and freeze bags of meat, and some I leave frozen for a while longer. At .33 a pound, this is by far the cheapest way to go.

I buy my cream soups on sale before Thanksgiving and stock up for the year then.

I buy mayonnaise in bulk at Sam’s Club, and cheese as well.

You can use bottled lemon juice in this if you like; it is less expensive and the flavor difference from fresh is not noticeable. Again, if you are living on your food storage, this is the way to go. When my lemons are ripe, I use the juice from those.

Curry can be expensive. I buy mine in bulk from Herb Products Co.
