Chicken Cacciatore
2-3 cans of chicken, OR Chicken pieces, with or without bones, cut small or left whole to equal about 4-6 chicken breasts OR one whole chicken, cut into pieces
2 24 oz. cans tomato sauce
2 24 oz. cans diced tomatoes in juice
1/2 cup freeze dried onions
Garlic, chopped fresh, or freeze dried, or powdered, to taste
1/3 cup basil
1/3 cup oregano
1/4 cup parsley
1/2 cup olive oil
1-2 cans chopped mushrooms (optional)
freeze-dried bell pepper to taste (optional)
Parmesan cheese (optional)
Heat oven to 350º .
In large baking pan or dish, combine all ingredients. Stir well.
Cook one hour, or until chicken is done.
Serve over rice.
Top with parmesan cheese.
