Tarragon Chicken Salad


2 cups cucumber, peeled and diced
1 can chicken, or 1 ½ cups finely chopped, cooked chicken breast

Dressing:
1 Tbsp fresh, chopped tarragon, or 1 tsp dried
2 Tbsp mayonnaise
2 Tbsp red wine vinegar

2 tsp dijon or spicy mustard
¾ tsp salt
¼ tsp pepper

Mix cucumber and chicken in bowl. Mix dressing ingredients in a separate bowl, whisking to combine. Pour dressing over cucumbers and chicken, mixing well to coat.

This can be a sandwich filler, on white bread with mayo (and sliced tomatoes if desired), or it can be eaten by itself.
